Cajun White Bean & Sausage Soup

If you're looking for a bowl of hearty comfort that's brimming with Cajun flavor, you're in the right spot. I'm showing you a recipe for Cajun White Bean & Sausage Soup that brings a smokey, spicy taste of Louisiana straight to your kitchen.

Packed with smoked sausage, creamy cannellini beans, and a dash of Tony's Creole Seasoning, this soup is not just a taste explosion but a wholesome, protein-packed meal that'll have you craving every spicy spoonful.


There are many variations of white bean and sausage soup but this is the way I learned how to make it because... well, most of my family recipes, just like my family, are from Louisiana. This is just how we cook. Italian versions are delicious but I love the flavor of the smoked sausage and creole seasoning!


If you want to make a variation that isn't so spicy and is a bit more traditional you can leave out the Tony's Creole seasoning and add kale or spinach. Serve this over steamed rice if you're extra hungry or want to stretch the meal further.


This recipe is naturally dairy free and gluten free!


Cajun White Beans & Sausage Recipe

Serves 6-8 in 30 minutes!


Ingredients:

  • 1 pound smoked sausage, sliced

  • 3 cans cannellini beans, drained and rinsed

  • 1 large onion, finely chopped

  • 2 green bells pepper, diced

  • 2 carrots, sliced

  • 3 cloves of garlic, minced

  • 5-6 cups chicken broth (depending on how thick or thin you like it)

  • 2-3 teaspoons Tony's Creole Seasoning

  • 1 bay leaf

  • Salt and pepper, to taste

  • Green onions, for garnish

  • 2 tablespoons olive oil

The Culinary Journey:

  1. Start by searing the sliced smoked sausage in a hot soup pot in half of the oil until it's golden brown, set aside.

  2. Add the rest of the oil, onion, bell pepper, and carrot to the pot. Sweat gently on medium low heat until they get soft.

  3. Add the garlic and stir for just one minute to draw out the garlic flavor, don't brown it!

  4. Add the sausage, cannellini beans, bay leaf, and Tony's Creole Seasoning to the pot along with the chicken broth.

  5. Simmer the soup for 20 minutes and taste for seasoning. If you want the soup a bit creamier, you can mash some of the beans with a potato masher but don't go overboard or they will all break.

  6. Ladle your Cajun White Bean & Sausage Soup into bowls, garnishing each with a sprinkle of fresh green onions. You can also serve over steamed rice!
